Ingredients
Scale
Cucumbers
- 3 cups Persian cucumbers (English cucumbers may also be used as a substitute)
Seasoning and Dressing
- 1 teaspoon Salt (Use less if desired)
- 2 tablespoons Sesame seeds (Can be omitted if preferred)
- 3 tablespoons Sesame oil (Canola oil is a lighter option)
- 3 tablespoons Light soy sauce (Use tamari for a gluten-free alternative)
- 1 tablespoon Sugar (Adjust to taste)
- 3 tablespoons Rice vinegar (Substitute with apple cider vinegar if needed)
- 1 tablespoon Chili oil (Adjust based on your spice tolerance)
- 1 clove Garlic (minced, optional) (Use garlic powder in smaller amounts if fresh is unavailable)
Instructions
- Prepare the Cucumbers: Begin by rinsing the Persian cucumbers thoroughly under cold water. Slice off the ends at an angle, then cut the cucumbers into oval-shaped slices to ensure even distribution of flavors.
- Salt and Rest: Place the cucumber slices in a large bowl, sprinkle with salt, and mix well to coat. Refrigerate for 20 minutes to allow the salt to draw out excess moisture, which will make the cucumbers crispier and prevent the salad from becoming watery.
- Drain and Rinse: After 20 minutes, drain any liquid that has been released by the cucumbers. Rinse the cucumbers quickly under cold water to remove excess salt, then drain again thoroughly.
- Combine Dressing Ingredients: Add sesame oil, light soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and the optional minced garlic to the cucumbers. Stir everything together until the cucumbers are evenly coated with the flavorful dressing.
- Serve: Transfer the salad to a serving dish and serve immediately to enjoy its fresh, crisp texture and zesty flavors at their best.
Notes
- For a gluten-free version, substitute light soy sauce with tamari.
- Adjust chili oil quantity based on your preferred spice level or omit if sensitive to heat.
- Sesame seeds can be omitted if unavailable or for a less textured salad.
- Apple cider vinegar is an effective substitute if rice vinegar is not accessible.
- Using fresh minced garlic adds more vibrant flavor compared to garlic powder, but either works well.
- Refrigerate the cucumbers with salt to ensure a crisp, water-reduced texture.
