- 1/3 cup Celery, chopped
- 1/3 cup Green onions, chopped

- 2 cups Whole milk
- 1.5 cups Heavy whipping cream
- 1 tablespoon Tomato paste
- 1 teaspoon Old Bay seasoning
- Salt and pepper, to taste
Instructions
- Melt the butter: In a heavy-bottomed pot over medium heat, melt 4 tablespoons of butter until bubbly and fragrant, approximately 2 minutes.
- Sauté vegetables: Add the chopped celery and green onions to the pot and sauté for 3-4 minutes until the vegetables are softened and aromatic.
- Add flour: Sprinkle in 3 tablespoons of flour, stirring well to coat the vegetables evenly. Continue to sauté for one more minute to cook the flour and develop the base.
- Add milk: Warm 2 cups of whole milk in the microwave for about 1 minute to bring it closer to room temperature. Gradually whisk the warmed milk into the pot, stirring constantly to prevent lumps.
- Add cream and seasonings: Whisk in 1.5 cups of heavy whipping cream, 1 tablespoon of tomato paste, 1 teaspoon of Old Bay seasoning, and season with salt and pepper to taste. Stir well to combine all flavors.
- Simmer the bisque: Bring the mixture to a gentle simmer over medium heat, stirring regularly to avoid sticking, and cook for 5-7 minutes to thicken and deepen flavors.
- Add seafood: Gently fold in the cooked shrimp and crab meat, cooking for an additional 2-3 minutes to warm the seafood through without overcooking.
- Serve: Remove the pot from heat and ladle the bisque into warm bowls. Garnish with fresh parsley or chives if desired, and serve immediately for the best taste.
