Instructions

  1. Prepare the Sweet Potato: Peel and chop the sweet potato into chunks, then boil or roast until soft. Mash it until smooth and set aside to cool slightly.
  2. Make the Pancake Batter: In a large bowl, whisk together the flour, brown sugar, baking powder, cinnamon, nutmeg, and salt. In another bowl, combine the mashed sweet potato, milk, eggs, melted butter, and vanilla extract. Gradually fold the wet ingredients into the dry ingredients until just combined, being careful not to overmix for a light, fluffy batter.
  3. Cook the Pancakes: Heat a nonstick skillet or griddle over medium heat and lightly grease it with butter or oil. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook for 2–3 minutes per side, or until golden brown and cooked through, flipping when small bubbles appear on the surface.
