Coconut Lime Drizzle
- 1/2 cup coconut milk
- 2 tbsp fresh lime juice
- 1 tsp lime zest
- 1 tbsp honey
- 1/4 tsp red pepper flakes

Instructions
- Marinate the Chicken. In a medium bowl, combine sweet chili sauce, soy sauce, grated ginger, and minced garlic. Add the chicken thighs and toss thoroughly to coat. Let the chicken marinate for at least 20 minutes to absorb all the flavors.
- Cook the Chicken. Heat vegetable oil in a skillet over medium heat. Add the marinated chicken thighs and cook for 6 to 8 minutes on each side until they turn golden brown and are cooked through. Once cooked, remove the chicken from the skillet and slice it thinly.
- Prepare the Rice. Cook jasmine rice according to the package instructions, ensuring fluffy and tender grains. Divide the cooked rice evenly among serving bowls.
- Make the Coconut Lime Drizzle. In a small bowl, whisk together the coconut milk, fresh lime juice, lime zest, honey, red pepper flakes, salt, and pepper until the mixture is smooth and well combined.
- Assemble the Bowls. Top each bowl of rice with sliced chicken, sliced red bell pepper, diced cucumber, shredded carrot, and chopped cilantro for a fresh and colorful presentation.
- Serve with Drizzle. Finally, drizzle the zesty coconut lime sauce over each bowl and serve immediately to enjoy the vibrant blend of flavors and textures.
Notes
- For extra heat, increase the amount of red pepper flakes in the coconut lime drizzle.
- You can substitute jasmine rice with brown rice or quinoa for a healthier option.
- Marinate the chicken longer (up to 2 hours) for a deeper flavor.
- Use light coconut milk to reduce the fat content if desired.
- To make this dish gluten-free, ensure soy sauce is tamari or a gluten-free variety.
