Ingredients
Scale
Dumplings
- ¾ cup all-purpose flour
- 2 large eggs, room temperature, lightly beaten
- 1 tablespoon fresh parsley, chopped
- 2 cups leftover stuffing
Soup
- 3 tablespoons unsalted butter
- 2 large carrots, peeled and diced
- 2 stalks celery, cut into chunks
- 1 large onion, diced
- 6 cups chicken stock (or turkey stock)
- 2 cups shredded cooked turkey
- Kosher salt, to taste
- Freshly cracked black pepper, to taste
- Fresh parsley, for garnish
Instructions
- Make Dumplings: In a bowl, combine the all-purpose flour, lightly beaten eggs, and chopped fresh parsley. Add the leftover stuffing and mix until the mixture is well combined and forms a cohesive dough.
- Cook Dumplings: Bring a large pot of salted water to a rolling boil. Dip a spoon in the hot water to prevent sticking, then drop large dollops of the stuffing mixture into the boiling water. Cook the dumplings until they float to the surface, which usually indicates they are cooked through. Use a slotted spoon to remove them and set aside for later use.
- Make Soup Base: In a large pot or Dutch oven, melt the unsalted butter over medium heat. Add the diced carrots, celery chunks, and diced onion. Season with salt to taste and cook until the vegetables are slightly softened, about 5-7 minutes, stirring occasionally.
- Simmer Soup: Pour in the chicken or turkey stock and bring the mixture to a boil. Once boiling, reduce the heat to low and let the soup simmer gently for 30 to 40 minutes until the vegetables are tender and the flavors have melded together.
- Add Turkey and Dumplings: Stir in the shredded cooked turkey and the previously cooked stuffing dumplings. Continue to simmer the soup until everything is heated through, about 5-10 minutes.
- Season and Serve: Taste the soup and adjust seasoning with additional salt and freshly cracked black pepper as needed. Garnish with fresh parsley before serving. Serve hot for a satisfying meal.
Notes
- Make sure the dumpling dough is not too wet or it will fall apart in the boiling water; adjust flour if necessary.
- Using leftover stuffing adds great flavor, but fresh homemade stuffing can also be used.
- If turkey stock isn’t available, chicken stock works just as well for the soup base.
- For a thicker soup, slightly reduce the amount of stock or add a small amount of flour or cornstarch slurry during simmering.
- This recipe is perfect for using holiday leftovers, especially after Thanksgiving.
