Instructions
- Cook Noodles: Cook the rice noodles according to package directions until tender. Drain and set aside to keep warm.
- Sauté Aromatics: Heat vegetable oil in a large pot over medium heat. Add minced garlic and grated ginger, sauté for about 1 minute until fragrant but not browned.
- Prepare Satay Sauce Base: Stir in the satay peanut sauce, peanut butter, soy sauce, fish sauce, brown sugar, and chili paste into the pot. Cook for 1 minute while stirring to combine and develop flavor.
- Simmer Broth: Pour in the beef broth and coconut milk. Bring mixture to a gentle simmer over medium heat.
- Cook Beef: Add the thinly sliced beef sirloin to the simmering broth. Cook for 2 to 3 minutes until the beef is just cooked through and tender.
- Add Vegetables: Stir in chopped bok choy and cook for an additional 2 minutes until slightly tender but still crisp.
- Season and Finish: Add the lime juice and taste the broth; adjust seasoning if necessary with additional soy sauce or chili paste.
- Assemble Soup: Divide the cooked noodles into serving bowls. Ladle the hot beef and broth over the noodles.
