Ingredients
Scale
Dry Ingredients
- 5 cups (215 g) brown rice cereal
- 1 cup (120 g) chopped pistachios
Syrup Mixture
- 3/4 cup (235 g) honey
- 1/2 cup (120 g) tahini
- 1/4 cup (68 g) pistachio butter (do not use pistachio paste)
- 1 tsp vanilla paste or ground vanilla (or substitute with vanilla extract)
- 1/4 tsp kosher salt
Instructions
- Prep the Pan and Cereal: Line a 9×9 inch square pan with parchment paper to ensure the treats don’t stick. In a large mixing bowl, combine the brown rice cereal and chopped pistachios, then set aside.
- Make the Syrup Mixture: In a saucepan or pot, add the honey, tahini, pistachio butter, vanilla, and kosher salt. Heat the mixture over low heat, stirring occasionally until it warms up and begins to gently bubble, ensuring everything is well combined and smooth.
- Mix, Pack, and Freeze: Pour the warm syrup mixture over the cereal and pistachios in the mixing bowl. Using a rubber spatula, fold the mixture together until evenly coated. Transfer the combined mixture into the prepared pan and spread it out evenly. Sprinkle additional chopped pistachios on top for a decorative finish. Firmly press down the mixture using a measuring cup or glass to compress it well. Cover the pan with plastic wrap and place it in the freezer for 1 hour to set.
- Cut and Store: Once set, remove the treats from the pan by lifting the parchment paper. Cut into 12 equal squares. Store the rice krispie treats in a glass container in the refrigerator or freezer for up to one week to maintain freshness and texture.
Notes
- Do not substitute pistachio butter with pistachio paste; the butter has a better texture for this recipe.
- Using parchment paper in the pan ensures easy removal of the treats once set.
- You can adjust the sweetness by modifying the amount of honey used.
- For a more intense pistachio flavor, consider toasting the chopped pistachios lightly before adding them.
- These treats are best enjoyed chilled or at room temperature; freezing helps them hold their shape better.
