Description

This Parmesan Crusted Chicken Sheet Pan Dinner is a flavorful, all-in-one meal featuring juicy chicken breasts crusted with Parmesan and breadcrumbs, roasted alongside crispy red potatoes and fresh green beans. The recipe is simple, uses minimal cleanup with just one sheet pan, and delivers a balanced combination of protein, vegetables, and a crunchy, savory crust.

Ingredients

Scale

Chicken

  • 1½ lb chicken breast (about 3-4 pieces, approx. 1 inch thick)
  • 2 Tbsp olive oil
  • 2 garlic cloves, minced
  • â…“ cup grated Parmesan
  • â…“ cup breadcrumbs (Italian or plain, optionally add 1 tsp Italian seasoning)
  • ½ tsp cracked pepper
  • ½ – ¾ tsp sea salt

Potatoes

  • 2 lb red potatoes, cut into bite-sized pieces (quarter small, cut larger into 6ths or 8ths)
  • 1-2 garlic cloves, minced
  • 2 Tbsp olive oil
  • 2 Tbsp grated Parmesan
  • Salt and pepper to taste

Green Beans

  • 1 lb fresh green beans, ends trimmed
  • 1 Tbsp olive oil
  • 1 garlic clove, minced
  • 1 Tbsp Parmesan (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 425°F to ensure a hot environment for roasting the ingredients evenly and achieving a crispy crust on the chicken and potatoes.
  2. Prepare Potatoes: Line a sheet pan with parchment paper or spray it with cooking oil for easy cleanup. In a medium bowl, toss the red potatoes with minced garlic, olive oil, Parmesan, salt, and pepper until evenly coated. Spread the potatoes over one-third of the sheet pan in a single layer and roast in the oven for 10-15 minutes to begin cooking and browning.
  3. Prepare and Add Chicken: While the potatoes cook, toss the chicken breasts in the same bowl with olive oil, minced garlic, Parmesan, breadcrumbs, cracked pepper, and sea salt until well coated. Once the potatoes have roasted for the initial time, remove the pan and add the chicken pieces alongside the potatoes.
  4. Prepare and Add Green Beans: Toss the trimmed green beans with olive oil, minced garlic, Parmesan (optional), salt, and pepper. Add the green beans to the sheet pan with the chicken and potatoes, spreading everything out evenly for uniform cooking.
  5. Bake All Together: Return the sheet pan to the oven and bake for approximately 25 minutes or until the chicken reaches an internal temperature of 165°F. For extra crispy potatoes and crust, optionally broil on high for 4-5 minutes at the end.
  6. Rest and Serve: Remove the pan from the oven and allow the chicken to rest for several minutes before serving. This ensures juices redistribute and flavors meld. Serve immediately and enjoy your balanced sheet pan dinner!

Notes

  • Use parchment paper for easier cleanup and to prevent sticking.
  • Broiling at the end crisps the potatoes and chicken crust to perfection.
  • Breadcrumbs can be Italian seasoned or plain with added Italian seasoning.
  • Ensure chicken reaches 165°F internal temperature for safety.
  • You can swap green beans for another vegetable like asparagus or broccoli.
