Description

These no bake cookies offer a nostalgic and easy-to-make treat just like Grandma used to make. Combining rich cocoa, creamy peanut butter, and wholesome quick oats, these cookies come together quickly without turning on the oven and deliver comforting chocolatey goodness in every bite.

Ingredients

Scale

Wet Ingredients

  • 1/2 cup unsalted butter
  • 1/4 cup milk
  • 1/2 cup peanut butter (or nut-free spread)
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 1/2 cups granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 3 cups quick oats
  • Pinch of salt

Instructions

  1. Prepare the Mixture: Melt the butter in a medium saucepan over medium heat. Add milk, granulated sugar, and unsweetened cocoa powder, then bring the mixture to a boil. Let it cook for 1 to 2 minutes while stirring occasionally to ensure it doesn’t burn and that the sugar dissolves completely.
  2. Add Peanut Butter & Vanilla: Remove the saucepan from heat and stir in the peanut butter and vanilla extract until the mixture turns smooth and creamy, creating the base for your cookies.
  3. Mix in Oats: Add the quick oats and a pinch of salt to the chocolate mixture. Stir thoroughly until all the oats are fully coated, and you obtain a thick, slightly sticky dough consistency.
  4. Form the Cookies: Line a baking sheet with parchment paper or a silicone baking mat. Using a spoon, drop spoonfuls of the cookie mixture onto the sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of the spoon to create an even shape.
  5. Let Them Set: Allow the cookies to cool and firm up at room temperature for 30 minutes to 1 hour. For quicker setting, place them in the refrigerator until firm to the touch.
  6. Serve: Once the cookies have set, they are ready to be enjoyed. Serve immediately or store in an airtight container for up to a week.

Notes

  • Use quick oats for the best texture; rolled oats can alter the consistency.
  • You can substitute peanut butter with any nut or seed butter to accommodate allergies.
  • If you prefer firmer cookies, refrigerate them for at least 1 hour before serving.
  • Store leftovers in an airtight container at room temperature or in the fridge to keep them fresh longer.
  • For a richer chocolate flavor, consider using Dutch-processed cocoa powder.
