Description

These Mozzarella Stuffed Vegetarian Meatball Bites are a delicious Italian-inspired appetizer featuring mashed brown lentils mixed with mushrooms, herbs, and Parmesan cheese, all wrapped around gooey mozzarella cubes. Baked to golden perfection, they make a perfect party snack or meatless treat, especially when served with warm marinara sauce.

Ingredients

Scale

Meatball Mixture

  • 2 cups cooked brown lentils, drained and mashed
  • 1 cup finely chopped mushrooms
  • 1/2 cup finely chopped yellow onion
  • 2 cloves garlic, minced
  • 3/4 cup Italian seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs, lightly beaten
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Filling

  • 4 ounces mozzarella cheese, cut into 1/2 inch cubes

Finishing

  • 2 tablespoons olive oil, for brushing or spraying

Instructions

  1. Preheat and prepare baking sheet: Preheat your oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Sauté vegetables: In a large skillet over medium heat, cook the chopped mushrooms and onion for 5 to 7 minutes until softened and moisture has evaporated. Add the minced garlic and cook for an additional 30 seconds, then remove the skillet from heat and let the mixture cool slightly.
  3. Combine meatball mixture: In a large mixing bowl, combine the mashed lentils, sautéed vegetables, Italian seasoned breadcrumbs, grated Parmesan cheese, eggs, chopped parsley, dried oregano, dried basil, salt, and black pepper. Mix thoroughly until fully combined and sticky enough to form balls.
  4. Form meatballs with mozzarella center: Scoop about 1 tablespoon of the mixture and flatten it gently in your hand. Place one cube of mozzarella cheese in the center, then carefully wrap the lentil mixture around it, sealing it completely. Roll the stuffed mixture into a smooth ball and place it on the prepared baking sheet. Repeat this process with the remaining mixture and cheese cubes.
  5. Prepare for baking: Lightly brush or spray the tops of the meatball bites with olive oil to promote golden browning and crispiness during baking.
  6. Bake: Place the baking sheet in the preheated oven and bake for 18 to 22 minutes, until the meatballs turn golden brown and feel firm to the touch.
  7. Cool and serve: Allow the meatballs to cool for about 5 minutes after baking, which helps the cheese inside set slightly. Serve warm, ideally alongside a warm marinara sauce for dipping.

Notes

  • Ensure the lentils are well drained to avoid a wet and runny mixture that won’t hold shape.
  • You can substitute canned lentils for convenience but be sure to drain and rinse well.
  • These meatball bites can be prepared ahead of time and reheated in an oven or air fryer without sacrificing texture.
  • Pair with warm marinara sauce or your favorite dipping sauce for extra flavor.
