Description

These Hot Honey Chicken Quesadillas are the ultimate flavor bomb – crispy, spicy chicken coated in a sticky, sweet heat with gooey cheese melting between warm tortillas. Perfectly balanced with smoky spices and a touch of honey heat, they’re ideal for weeknight dinners or crowd-pleasing parties.

Ingredients

Scale

Chicken

  • 2 cups cooked chicken, shredded or chopped
  • 1 tbsp olive oil or butter
  • 1 tsp smoked paprika
  • ½ tsp chili powder
  • ½ tsp garlic powder
  • Salt & black pepper, to taste

Hot Honey Sauce

  • ¼ cup honey
  • 1–2 tsp hot sauce (Frank’s, Cholula, or your favorite)
  • ½ tsp red pepper flakes (adjust heat to preference)
  • Optional: ½ tsp apple cider vinegar or lime juice

Quesadillas

  • Large flour tortillas
  • 1 ½–2 cups shredded cheese (best combo: mozzarella + sharp cheddar or pepper jack for heat)
  • Butter or oil for the pan

Optional Add-Ins

  • Thinly sliced red onion
  • Jalapeños
  • Corn or diced bell peppers
  • Fresh cilantro

Instructions

  1. Make the Hot Honey: Warm the honey gently either by microwaving for 20–30 seconds or heating in a small pan on low heat. Stir in your choice of hot sauce, red pepper flakes, and optional apple cider vinegar or lime juice for brightness. Set aside to let the flavors blend.
  2. Season the Chicken: Heat olive oil or butter in a skillet over medium heat. Add shredded or chopped chicken, along with smoked paprika, chili powder, garlic powder, salt, and black pepper. Cook the chicken for 3–4 minutes until it’s warmed through and gets lightly crispy on the edges. Drizzle half of the prepared hot honey over the chicken and toss to evenly coat.
  3. Build the Quesadillas: Place one large flour tortilla into a clean skillet over medium heat. Sprinkle a layer of shredded cheese evenly over the tortilla. Add a layer of the hot honey-coated chicken along with any optional add-ins like sliced red onions or jalapeños. For best texture and holding power, add another generous layer of cheese on top before placing the second tortilla on top to complete your quesadilla.
  4. Cook: Cook the quesadilla for 2–3 minutes per side until the tortillas are golden brown, crispy, and the cheese is melted inside. Press gently with a spatula and carefully flip to avoid spilling the filling.
  5. Finish: Once cooked, remove from skillet and slice into wedges. Drizzle the remaining hot honey sauce over each wedge for an extra punch of sweet heat. Serve immediately.

Notes

  • Using rotisserie chicken saves time and adds flavor.
  • Let the quesadilla rest for 1 minute before slicing to achieve a perfect cheese pull.
  • A pinch of flaky sea salt on top can elevate the flavor.
  • Customize heat levels by adjusting hot sauce and red pepper flakes.
  • Perfect for making party platters or doubling the recipe for a crowd.
  • Optional dips like ranch, chipotle mayo, or avocado crema make great accompaniments.
