Description

This Easy Smoky Carrot Dip is a flavorful and creamy appetizer perfect for home entertaining. Made with sautéed carrots, fragrant spices, and nuts, it’s a healthy and vibrant dip bursting with smoky and citrusy notes. Ready in just 25 minutes, this versatile dip pairs wonderfully with crackers, fresh vegetables, or toasted bread.

Ingredients

Scale

Vegetables

  • 4 medium carrots (fresh, tender)
  • 1 medium onion (chopped)
  • 1/4 cup parsley (fresh, for garnish)

Spices and Flavorings

  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1/2 teaspoon cinnamon (adjust to taste)
  • 1/2 teaspoon cumin (adjust to taste)

Other Ingredients

  • 1/2 cup hazelnuts (or walnuts)
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil (or avocado oil), plus more as needed
  • 2 tablespoons orange juice (or lemon juice)

Instructions

  1. Preparation: Gather and prepare all ingredients by peeling and chopping the carrots, chopping the onion, and rinsing the parsley.
  2. Sauté Onions: Heat 2 tablespoons of olive oil in a medium pan over medium heat. Add the chopped onions and cook, stirring occasionally, until they become soft and translucent, about 5 minutes.
  3. Toast Spices: Sprinkle in the cinnamon and cumin, stirring briefly to toast and release their aromas, about 1 minute.
  4. Cook Carrots: Add the chopped carrots to the pan and stir well to combine with onions and spices. Cook for about 15 minutes until the carrots are tender and caramelized, stirring occasionally to avoid burning.
  5. Blend the Dip: Allow the cooked mixture to cool slightly. Transfer it to a food processor, then add the hazelnuts, orange juice, tomato paste, parsley, and red pepper flakes. Pulse until the mixture is creamy but still has some texture.
  6. Adjust Consistency: If the dip is too thick, gradually add more olive oil, blending after each addition until you reach your desired creaminess and smoothness.
  7. Serve: Transfer the dip to a serving bowl, garnish with additional fresh parsley, and serve with crackers, bread, or fresh vegetables.

Notes

  • You can substitute hazelnuts with walnuts or almonds according to your preference.
  • Adjust the red pepper flakes to control the spiciness of the dip.
  • If you prefer a tangier flavor, use lemon juice instead of orange juice.
  • This dip can be stored in an airtight container in the refrigerator for up to 3 days.
  • For a smoother texture, blend the mixture longer in the food processor.
