Description

This Easy Pepper Steak recipe is a quick and flavorful stir-fry dish featuring tender flank steak and vibrant bell peppers sautéed in a savory soy-based sauce. Perfect for a speedy weeknight dinner, it combines tender meat, crisp vegetables, and a slightly sweet, tangy sauce for a satisfying meal.

Ingredients

Scale

Protein and Vegetables

  • 1 1/4 pounds flank steak, thinly sliced
  • 1 medium red bell pepper, thinly sliced
  • 1 medium green bell pepper, thinly sliced

For the Sauce

  • 1 tablespoon minced garlic
  • 2 teaspoons minced ginger
  • 1/4 cup soy sauce
  • 1/4 cup chicken broth or water
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon black pepper, or more to taste

Other Ingredients

  • 2 tablespoons vegetable oil, divided

Instructions

  1. Prepare the Sauce: In a small bowl, combine soy sauce, chicken broth (or water), brown sugar, cornstarch, and black pepper. Stir well and set aside.
  2. Cook the Peppers: Heat 1 tablespoon of vegetable oil in a large pan over medium-high heat. Add sliced red and green bell peppers and cook for 2 to 3 minutes until they soften but retain some crunch. Remove peppers from the pan and set aside on a plate.
  3. Cook the Steak: Add the remaining 1 tablespoon of vegetable oil to the pan. Add the thinly sliced flank steak and cook for 2 to 3 minutes, allowing the meat to brown on the outside while staying pink inside.
  4. Add Aromatics: Stir in minced garlic and ginger. Cook for about 30 seconds until fragrant and aromatic.
  5. Combine and Thicken: Return the cooked bell peppers to the pan. Stir the prepared sauce mixture once again and pour it into the pan. Cook, stirring frequently, until the sauce thickens and coats the steak and vegetables evenly.
  6. Serve: Transfer the finished pepper steak to a serving dish and enjoy immediately with your choice of rice or noodles.

Notes

  • For a spicier variation, add a pinch of crushed red pepper flakes when cooking the garlic and ginger.
  • You can substitute flank steak with sirloin or skirt steak if preferred.
  • To make it gluten-free, use tamari or a gluten-free soy sauce.
  • Adjust black pepper to your taste for desired peppery kick.
  • Serve over steamed rice or alongside stir-fried vegetables for a complete meal.
