Ingredients
Scale
Chicken and Filling
- 4 boneless, skinless chicken breasts
- 8 slices of ham
- 4 slices of Swiss cheese
Breading
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
Cooking
- Olive oil or butter for cooking (about 2-3 tablespoons)
- Salt and pepper to taste
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prepare for baking.
- Prepare Chicken: Place the chicken breasts between two sheets of plastic wrap or in a plastic bag and pound them with a meat mallet or rolling pin until about half an inch thick. Season both sides with salt and pepper to taste.
- Stuff Chicken: Lay two slices of ham and one slice of Swiss cheese on each flattened chicken breast. Roll the chicken tightly around the filling and secure with toothpicks if necessary to keep the rolls intact during cooking.
- Breading Station: Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each chicken roll first in the flour, shaking off excess, then dip into the eggs, and finally coat thoroughly with the breadcrumbs to ensure a crispy crust.
- Sear Chicken Rolls: Heat olive oil or butter in a large skillet over medium heat. Add the breaded chicken rolls and sear each side for 3-4 minutes until they are golden brown and crispy, turning carefully to avoid breaking the rolls.
- Bake to Finish: Transfer the seared chicken rolls onto the prepared baking sheet and place them in the preheated oven. Bake for 20 minutes or until the chicken is fully cooked through and the cheese inside is melted and bubbly.
- Serve: Remove toothpicks before serving. Let the chicken rest for a few minutes, then slice and serve warm, optionally garnished with fresh herbs or a light side salad.
Notes
- Ensure the chicken breasts are evenly pounded to cook uniformly and make rolling easier.
- Using breadcrumbs that are seasoned or panko can add extra crunch and flavor.
- To prevent the rolls from unrolling, secure with toothpicks before cooking.
- Leftover chicken cordon bleu can be reheated in the oven to preserve crispiness.
- For a lower-fat version, use cooking spray instead of oil or butter for searing.
