Instructions

  1. Cook the tortellini: Prepare the cheese tortellini according to the package instructions until al dente. Drain well and set aside for later use.
  2. Caramelize the onions: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the thinly sliced onions and cook slowly, stirring occasionally, until they turn golden brown and caramelized, about 15 to 20 minutes. Remove the onions from the skillet and set aside.
  3. Sauté mushrooms and garlic: In the same skillet, add the remaining tablespoon of olive oil and increase the heat to medium-high. Add the sliced mushrooms and cook until they become tender and start to brown, about 5 to 7 minutes. Then add the minced garlic and cook for an additional 1 to 2 minutes until fragrant.
  4. Wilt the spinach: Reduce the heat to medium and add the fresh spinach to the skillet. Stir and cook until the spinach wilts down and becomes tender.
