Ingredients
Scale
Sauce
- ½ cup BBQ sauce
- â…“ cup low-sodium soy sauce
- 1-2 tablespoons brown sugar
- ¼ cup chicken broth
Main
- 2 tablespoons olive oil, divided
- 2-3 boneless, skinless chicken breasts (about 1½ – 2 lbs), cut into chunks
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 bell peppers (red, orange, or yellow), chopped
- 3 cups chopped fresh broccoli
- 1 onion (yellow, white, or sweet), thinly sliced
- 2 cloves garlic, minced or pressed
- 2 teaspoons grated fresh ginger
Instructions
- Make Sauce: Combine BBQ sauce, low-sodium soy sauce, brown sugar, and chicken broth in a small bowl. Whisk together until smooth and set aside for later use.
- Cook Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat until hot. Add the chicken chunks and season with salt and pepper. Stir occasionally and cook for 4-5 minutes until the chicken reaches an internal temperature of 165°F and is fully cooked. Remove chicken from the pan and place on a plate.
- Sauté Vegetables: Using the same skillet, add the remaining tablespoon of olive oil. Add chopped bell peppers, broccoli, and sliced onion. Cook for 2 minutes over medium-high heat. Then add minced garlic and grated ginger, stirring and cooking for an additional 2-3 minutes until veggies are tender but still crisp.
- Combine and Serve: Return the cooked chicken to the skillet with the vegetables. Pour in the prepared sauce and stir well to combine. Cook for another 3-4 minutes, allowing flavors to meld and vegetables to reach desired tenderness. Serve the chicken stir fry over hot cooked rice and garnish with green onions if desired.
Notes
- Use freshly grated ginger and fresh garlic for best flavor.
- Adjust brown sugar amount depending on your preferred sweetness.
- Serve with steamed rice or noodles to complete the meal.
- Vegetables can be swapped or added per preference (e.g., snap peas, carrots).
- Cook chicken thoroughly to reach safe internal temperature of 165°F.
