  • 1 onion (yellow, white, or sweet), thinly sliced
  • 2 cloves garlic, minced or pressed
  • 2 teaspoons grated fresh ginger


Instructions

  1. Make Sauce: Combine BBQ sauce, low-sodium soy sauce, brown sugar, and chicken broth in a small bowl. Whisk together until smooth and set aside for later use.
  2. Cook Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat until hot. Add the chicken chunks and season with salt and pepper. Stir occasionally and cook for 4-5 minutes until the chicken reaches an internal temperature of 165°F and is fully cooked. Remove chicken from the pan and place on a plate.
  3. Sauté Vegetables: Using the same skillet, add the remaining tablespoon of olive oil. Add chopped bell peppers, broccoli, and sliced onion. Cook for 2 minutes over medium-high heat. Then add minced garlic and grated ginger, stirring and cooking for an additional 2-3 minutes until veggies are tender but still crisp.
  4. Combine and Serve: Return the cooked chicken to the skillet with the vegetables. Pour in the prepared sauce and stir well to combine. Cook for another 3-4 minutes, allowing flavors to meld and vegetables to reach desired tenderness. Serve the chicken stir fry over hot cooked rice and garnish with green onions if desired.
