Enchiladas
- 8 flour tortillas
- 1 can (10 oz) enchilada sauce
- 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the enchiladas.
- Brown the Beef: In a skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain any excess fat to keep the dish from being greasy.
- Season the Meat: Stir in the chili powder, cumin, salt, and pepper into the beef, mixing well to evenly distribute the spices.
- Add Beans and Sauce: Add the drained black beans and half a cup of enchilada sauce to the skillet, stirring until all ingredients are combined and heated through.
- Assemble Enchiladas: Spoon the beef and bean mixture onto the center of each flour tortilla, then roll tightly. Arrange the rolled tortillas seam-side down in a baking dish.
- Add Sauce and Cheese: Pour the remaining enchilada sauce evenly over the rolled tortillas, then sprinkle the shredded cheese on top.
