Description

These Baked Apple Pie Rice Paper Rolls combine the classic flavors of apple pie with a fun, crispy twist. Soft rice paper wrappers are filled with a sweet, spiced apple mixture, then baked to golden perfection for a light yet satisfying dessert perfect for any occasion.

Ingredients

Scale

For the Filling

  • 3 medium apples, peeled, cored and finely diced
  • 2 tablespoons lemon juice
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 2 tablespoons water

For the Rolls

  • 12 rice paper wrappers
  • Cooking spray or 2 tablespoons melted butter
  • 2 tablespoons granulated sugar for sprinkling

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Cook Apple Filling: In a medium saucepan over medium heat, combine the diced apples and lemon juice. Cook for 3 to 4 minutes until the apples start to soften slightly, stirring occasionally.
  3. Add Spices and Thicken Filling: Stir in the brown sugar, ground cinnamon, nutmeg, and vanilla extract. In a small bowl, mix together the cornstarch and water to create a slurry, then add this to the apple mixture. Continue to cook for another 2 to 3 minutes until the mixture thickens, then remove from heat and let it cool slightly.
  4. Soften Rice Paper Wrappers: Dip one rice paper wrapper into a shallow dish filled with warm water for about 10 seconds or until softened. Lay it flat on a clean work surface.
  5. Assemble Rolls: Spoon 2 to 3 tablespoons of the cooled apple filling onto the center of the softened rice paper wrapper. Fold the sides inward and tightly roll it up like a burrito to encase the filling fully. Place the roll seam side down on the prepared baking sheet. Repeat this process with all remaining wrappers and filling.
  6. Prepare for Baking: Lightly brush each roll with melted butter or spray with cooking spray, then sprinkle granulated sugar evenly over the rolls to add a sweet, crisp finish.
  7. Bake the Rolls: Bake in the preheated oven for 18 to 22 minutes or until the rolls are golden brown and crisp on the outside.
  8. Cool and Serve: Remove from the oven and let the rolls cool slightly before serving. Enjoy warm, optionally paired with vanilla ice cream or caramel sauce.

Notes

  • Use firm apple varieties such as Granny Smith or Honeycrisp for the best texture in your filling.
  • Serve warm for the best flavor and texture, optionally with vanilla ice cream or a drizzle of caramel sauce.
  • These rolls are best eaten fresh but can be reheated briefly in the oven to restore crispness.
